Roasted Vegetable Meals

One of the easiest and most nutritious vegan meals is a simple roasted vegetable dish. All you have to do is roast up some veggies, such as cauliflower, broccoli, or squash, and add some cooked chickpeas. Chickpea Salad Sandwich

Instead of a chicken or tuna salad sandwich, consider a chickpea salad sandwich to satisfy those deli lunch cravings. Chili is classic comfort food. And it’s not hard to make a vegan version. Even better, it’s easy to store in containers and even freeze for later, making it a great meal prep option. All you have to do is combine your ingredients in the crockpot: mix and match diced tomatoes, black beans, corn, cubed potatoes, kidney beans, or whatever else you like in your chili.
